Daniel Idźkowski

Raised between San Francisco and Poland, home to one of Europe's oldest spirit-distilling traditions.

Daniel grew up between Silicon Valley and Poland, which has made spirits for centuries. He spent years studying the chemistry of aging. Then he did what the industry thought was impossible: he kept the aging going after the bottle was sealed. The method is protected by international patents. In the company's process, spirits are expected to keep evolving for decades, reaching a smoothness barrel aging is not designed to reach.

  • The Idźkowski family traces its roots to Żebry Idzki in the Masovian Voivodeship, an ancestral village of the szlachta zagrodowa, the manor nobility. Generations of tending the land instilled an appreciation for craftsmanship and patience.
  • He grew up between Silicon Valley and one of Europe's oldest spirit-distilling traditions. He saw how technology and craft could change the way spirits are made.
  • After years of research into the molecular chemistry of aging, he achieved what the industry considered impossible: continuing the aging process after bottling. The breakthrough is now protected by international patents.
The Vision

Why Tequila & Mezcal

With the ability to create vintaged spirits from any base, why choose agave? Tequila and mezcal are the proof. The same patented process extends to any spirit, and to wine.

  • Oak aging does two things: it imparts flavor through tannins, and develops smoothness by converting harsh aldehydes into softer compounds.
  • For bourbon, whiskey, rum, and brandy, the barrel is the flavor. Tequila and mezcal are different. The beauty is in the agave itself: terroir-driven, herbal, mineral, earthy. Aggressive oak smothers it.
  • That is why fine agave spirits are aged in used barrels, to add smoothness without barrel character.
  • Our in-bottle aging targets smoothness, not flavor, preserving the complexity of tequila and mezcal while letting it deepen for decades.
  • If selective conditioning can elevate the most nuanced spirits in the world, it can elevate any spirit. Tequila and mezcal are our proof of concept.

Historical Bonds

Poland & Mexico

A bond of solidarity, refuge, and mutual respect that spans more than 150 years.

  • 1860s, Polish Soldiers in Mexico. During the French intervention, a number of Polish soldiers and officers, drawn by the parallel between Mexico's fight for sovereignty and Poland's own struggle against partition, sided with the Republican forces of Benito Juárez.
  • 1943 to 1947, Colonia Santa Rosa. When World War II displaced thousands of Polish refugees, many of them children orphaned by the war, Mexico opened its doors. The hacienda of Santa Rosa in León, Guanajuato became home to roughly 1,500 Polish refugees over four years, offering sanctuary when much of the world had closed its borders. This act of compassion remains a cornerstone of Polish-Mexican relations.
  • Present, Ongoing Diplomatic Bonds. Poland and Mexico have maintained cordial ties for generations; formal diplomatic relations date to 1928. ETERNO ) RAÍZ is the modern embodiment of that bond between peoples: Polish-invented in-bottle aging married to Mexican agave craft.

Our Responsibility to the Spirits World

This technology belongs to the entire spirits industry, not to us alone.

  • Through strategic licensing, we work with major whiskey, bourbon, rum, and brandy producers to bring patented in-bottle aging to spirits at every level.
  • Environmental sustainability. Less reliance on new barrel production, with the potential to save over 100,000 oak trees annually and lower the carbon footprint of aged spirits.
  • Production efficiency. Comparable smoothness and complexity without warehouse barrels, reducing storage costs and capital lock-up.
  • Quality enhancement. Spirits continue developing after they leave the distillery, opening true vintage expressions across every category.
  • Wider access. The character of top-shelf aged spirits, made more affordable, raising quality across the industry.

Finite land and terroir mean volume cannot scale. Value can.

  • The highlands of Jalisco and the agave fields of Oaxaca are finite. Production is bound by land and terroir, so volume cannot scale with demand.
  • Rather than dilute quality to grow supply, the spirit is engineered to appreciate in value through patented in-bottle aging.
  • In the company's process, each sealed bottle is expected to keep maturing for decades, deepening in complexity over time. A fixed supply designed to improve with age is built to be investment-grade.
