Daniel grew up between Silicon Valley and Poland, which has made spirits for centuries. He spent years studying the chemistry of aging. Then he did what the industry thought was impossible: he kept the aging going after the bottle was sealed. The method is protected by international patents. In the company's process, spirits are expected to keep evolving for decades, reaching a smoothness barrel aging is not designed to reach.
